Steak Fajitas

You can use pretty much any cut of meat for these or if you have left over roast or steak, put it to good use!

Ingredients

1 lb. beef cut into strips
1 large onion, sliced into rings
1 green pepper, sliced into strips
1 red pepper, sliced into strips
1 yellow pepper, sliced into strips
Tortilla shells
Fresh Salsa

Vegetable Marinade
2 tbsp. Cajun Spice
2 tbsp. Olive Oil
3 tbsp. water
2 tsp. paprika
2 cloves garlic, minced
1/3 cup chopped cilantro

Meat Marinade
2 tbsp. Cajun Spice
2 tbsp. Olive Oil
3 tbsp. water
2 cloves garlic, minced

Directions

  1. Mix the vegetable marinade and pour over vegetables. Mix well and let sit.
  2. Mix the meat marinade and pour over the meat. Mix well and let sit for an hour (cover and put in fridge if using raw meat).
  3. Heat a pan over medium heat.
  4. Add the meat. If pan becomes dry, add a few tablespoons of water.
  5. Cook until tender and remove from heat and cover. If using cooked meat, heat until the marinade has fully coated the meat and is no longer wet looking.
  6. In the hot pan, add the vegetables
  7. Cook until the onions are transparent.
  8. Remove from heat and serve with warm tortillas and fresh salsa.
